This Video Shows How Easy Rice Pudding Is Without a Recipe

It's easy to get caught up in the world of cookies, cake, and ice cream, forgetting one of the world's simplest pleasures: rice pudding. It also happens to be one of the easiest and speediest sweets to make, as demonstrated by this non-recipe recipe from Food52.


In this video, Food52 founders Amanda Hesser and Merrill Stubbs share their method of making rice pudding, which is adaptable and easy to throw together on a whim. "Our rice pudding technique," Amanda says, "is basically to have no technique."

Their basic outline: Start with a handful of arborio rice per person, then pour in a milk of your choice, using an approximate proportion of one part rice to four parts milk. Add in sweetener, such as sugar or honey, to taste; any other flavorings you'd like (three of their suggestions: vanilla-cinnamon-raisin, green cardamom-Meyer lemon, or cocoa powder with almond extract). Simmer it over the stove or in the oven until the rice is cooked; always finish the dish with a generous pinch of salt for more depth.
