Blanch Sweet Corn and Freeze to Store It for Six Months

Sweet corn starts losing its sweetness once it's picked, so it's best to eat it fresh—and also why it isn't available throughout the year. But America's Test Kitchen has a way to store it for up to six months.

As the video says, shuck the corn and put it in boiling water. This deactivates the enzymes that convert sugar to starch. Once it's boiled, remove the corn and put it into an ice water bath. Once cooled, dry them on a dish towel and place them in an air-tight bag. They'll last in the freezer for up to six months.

ATK also shares another tip for keeping sweet corn sweet overnight, while it's in season right now. Place it in a brown paper bag (without shucking), put that in a Ziploc, and store this in the fridge.

Once you're done eating, don't throw out those cobs just yet. They are perfect to roast juicier chicken.
