Get Wood Smoked Flavor on a Gas Grill

Gas grills can be convenient and easy to clean up, but they don't usually offer the same smoky, wood-smoked flavor and aroma that a charcoal grill can give you. Luckily, you can bring the smoke to the gas grill pretty easily, thanks to the folks at America's Test Kitchen. Here's how.

The method is simple: you'll need some aluminum foil, and some wood chips you want to burn for that delicious, smoky smell and flavor infused in your grilled food. Soak about two cups of wood chips in water for 15 minutes, then drain them. Leave another two cups completely dry. Then wrap the soaked chips in one aluminum foil packet and the dry chips in another, making sure the chips don't poke holes in the foil. Cut two evenly spaced two-inch slits across the top of each packet, and put both packets of wood chips on your gas grill's primary burner.

The combination of wet and dry chips will give you steady, even smoke over the course of your cooking, so you don't have stronger smoke at the beginning of the meal and weaker smoke later, and so you don't have to add more chips later on while you're grilling. It's simple, easy, and adds a ton of flavor and aroma to your backyard grillout.
