If you're not a big fan of storing your notes on a third-party service like Google Keep or Evernote, Paperwork is similar software that's open-source that also allows you to host it yourself.
Paperwork isn't nearly as complex as something like Evernote, but it does have a lot of the more useful features. You can various notebooks that you can store you notes in, a tagging system, multi-media uploading, and WYSIWYG editing. There aren't any mobile apps or anything, but if you'd prefer to keep your notes in your own hands, it's a pretty solid alternative.
