If you've got a jar of mayo that's nearly empty, but still good, don't be so quick to toss it. Add some olive oil and spices, give it a shake, and you've just created your own homemade salad dressing.
We've told you how to make the most of every drop of your Sriracha, and this is a similar method for mayo. It comes from Epicurious, and the possibilities abound. Add lemon juice, olive oil, and chopped herbs to make creamy lemon salad dressing. Or make a chile-lime salad dressing with olive oil, Tabasco sauce, and lime juice. Here are the incredibly simple instructions:
1. Twist the cap off the bottle. 2. Pour oil, vinegar, or other saucy ingredients into the bottle. 3. Replace cap (firmly). 4. Shake. How much oil/vinegar/juice you add will depend on how much mayo/ketchup/mustard is in the bottle; a good rule of thumb is to make your mixture about 1/3 acid. Go ahead and eyeball this, and add non-acidic ingredients to taste. You can always fix a dressing later by adding a little more oil, or even some water to thin it out.
