Whether you're having friends over March Madness viewing or headed to a potluck, there's always going to be an opportunity show off your guacamole-making skills. If, like us, you take a certain level of pride in being an avocado whisperer, here's a trick that's going to take your guacamole game to the next level.
Dana Cowin, editor-in-chief of Food & Wine magazine and author of the book Mastering My Mistakes in the Kitchen, shared a "why didn't I think of that?" moment on Instagram when she was watching New York chef Alex Stupak prepare guacamole for a crowd. Here's what Stupak does: He scoops out the flesh of half a dozen avocados, places them on a cooling rack with 1/4-inch square mesh, and then places the rack over a half-size hotel pan already filled with other ingredients needed for guacamole (like cilantro and onions). Press the avocado through the wire mesh, mix together, and in mere seconds, you've got a large batch of guacamole with a consistent texture that's not too smooth but not too chunky.
This trick probably isn't too useful if you're just making guacamole for yourself (unless you really love guacamole and you're very hungry, in which case, we don't judge), but it's a pretty brilliant shortcut for making a large batch of guac for a taco night, a Cinco de Mayo bash, a spring picnic, you name it. And the same tip could easily be applied to making salads, tacos, or anything else that calls for a large amount of chopped avocado.
