We've covered plenty of beginning knife skills worth mastering, from basic movements like the slice and chop to prep tasks like dicing an onion. But if you're looking for more of a challenge, maybe it's time to move on to some more advanced knife work.
The folks at First We Feast, who've been known to compile tutorials on basics like opening an avocado and finely chopping garlic, have put together an intermediate knife work primer, complete with more animated GIFs. In it, chef Chris Jaeckle of New York's all'onda demonstrates more challenging tasks, including how to julienne, the best way to prep bell peppers, and—our favorite—fileting a fish.
Once you become a fish fileting ninja, just remember: you'll want to keep some fresh lemons around to neutralize that inevitable lingering fish smell on your hands.
